Who said that you need to go out to a fancy and high-end restaurant in town to get some nice dumplings? Today, we bring you a very healthy and very filling chicken and dumpling recipe that is as simple as it is tasty.
So forget ordering in those fattening pizzas or eating the leftover Chinese takeout in your fridge from two days ago. Cooking a dumpling dish has never been this easy or fun!
Chicken: One whole, cut into pieces
Water: 4 cups
Celery: 3 stalks, sliced
Carrot: 1, peeled and sliced
Onion: ½ cup, chopped
Pepper: ¼ tablespoon
Flour: 1/3 cup
Milk: 1 cup
Parsley: 2 teaspoons, minced
For Biscuit dumplings:
Crisco: ¼ cups
Self-rising flour: 2 cups
Milk: 1/3 cup
For the dumplings, cut the Crisco into the flour, followed by the milk and mix thoroughly. When it gets to a dense consistency, drop a small spoonful of it into boiling water and cook for 25 minutes on low heat with the lid on. When done, take it out and set it aside.
Put together the water, the chicken, celery, carrots, onion, pepper and salt into a big pot and cook. Put it on simmer for at least two and a half hours.
When the chicken is done, set it aside and add water to the broth to make at least four cups of it.
Mix the flour and the milk in a separate bowl.
Add the broth into a pan and add the milk and flour combination. Cook this over low heat, until it achieves a thick, gravy-like consistency. Do not forget to keep stirring.
After five minutes, add in the chicken.
Pour it into a bowl and add the dumplings into it. Serve with a sprinkling of a pinch of parsley while it is still hot.
